Job Info:
- Develop Inflight F&B services and monitor service planning and operational activities
- Maintain information on menus and services
- Develop and implement new food and beverage product offerings
- Implement seasonal menu changes including Food Festivals
- Build a culinary database of regional recipes
- Support the preparation of training documents (Caterer & Crew)
- Support stakeholders in creating inflight service concepts and new product evaluation meant to enhance passenger experience and crew productivity
- Position involves extensive travelling in India & abroad
Skills & Attributes
Product development
- Schedule meal presentations at all caterers as per agreed annual schedule
- Prepare menu brief for the Caterer
- Conduct the menu presentation and record final selection of menus
- Oversee preparation of menu album and Crew plating guidelines
- Analyze prices quoted by Caterers and make recommendation to Snr. Team
- Prepare Menu Grids/MPC. Maintain rate sheets as per airline format
- Prepare menu card write ups and coordinate with printer
- Monitor menu card ordering (qty and timeliness) with Procurement
Audits:
- Conduct timely menu audits at various units & share findings with caterer and monitor corrective actions
- Review passenger and crew feedback – Investigate/ analyze with respect to F & B
- Consolidate the feedback findings and share for further actions with all concerned
- Report early trends on cost escalation; advise corrective measures
Research:
- Perform competitive benchmarking
- Identify industry best practices and customer trends
Work Experience
- Minimum 5 years of experience as menu development in large airlines or flight kitchens with an advantage in F&B pricing
- Proficient in Advance Microsoft Excel & preparation of PowerPoint presentation
